Favorite fish? I love swordfish! Swordfish is such a meaty fish and I recommend people cook it however they would cook their steaks. For me that is in a pan with butter and rosemary and I just kinda keep basting the fish in the butter like Gordon Ramsey says to do with steaks.
What is your job here? What does your day to day look like? I manage the retail market which is way more exciting than it sounds. Most of my day is talking to customers about their favorite fish and swapping recipes and cooking tips.
What is the most common question people ask you? How do you cook it? So while there are more ways to cook any given fish than I could ever figure out, I have a way that you can cook literally ANY fish. In a pan on medium high heat add ½ butter and ½ oil then put salt and pepper on your fish and cook each side for a few minutes. Cook until the fish is at 140 degrees and then let it rest. I especially recommend it this way if it is your first time trying a fish. Old bay is good but for some mild fish it can completely overpower them.
What do you do for fun away from work? I play an especially nerdy card game called Magic The Gathering and have played with some of the same nerds for well over a decade now.
What is something people might be surprised to know about you? I am fairly fluent in French and I HATE grapefruit.
What is your favorite restaurant in the greater Jacksonville area? I love Dos Vatos Tacos. Derek over there is really innovative and he always has something unique on his menu. They even hosted my rehearsal dinner!

Share a memorable experience you’ve had while working at Mayport C&C Fisheries? There have been many! I distinctly remember being enthralled seeing a 5lb lobster for the first time
What is your favorite seafood dish to prepare at home? I prefer to bake salmon with seasoning and lemon butter, along with a side or two. It’s simple and delicious.
What do you find most rewarding about your job? We recently started shipping seafood across the continental US, and hearing positive feedback from folks who live in areas with low or no access to fresh seafood has been so rewarding. It’s easy to take something like fresh seafood for granted.
What do you do for fun away from work? The consistent hobby that I usually come back to is playing video games with both my local friends and from afar. I prefer Rocket League and Minecraft.

What do you do for fun away from work? Spend time with family and volunteer at Possibilities Plus an organization devoted to helping young adults with autism.
What is something people might be surprised to know about you? I am an Eagle Scout.

Favorite fish? It’s hard for me to choose just one. My top 3 are tuna, flounder, and grouper.
What is your job here? What does your day to day look like? Retail associate. I help the retail run smoothly and think of new ideas to help the company grow.
What is the most common question people ask you? Customers often ask “What’s the best way to cook the fish?” I myself like a blackened white fish in a little butter and oil.
What do you do for fun away from work? Mostly hang out with my daughter, go on nature walks, and enjoy the beautiful Florida weather.
What is something people might be surprised to know about you? I love karaoke, even though I’m not a great singer. I’m also a decent poker player, so let me know if you wanna lose some money.
What is your favorite restaurant in the greater Jacksonville area? That’s a hard choice, depends on my mood. A classic was Ragtime in Atlantic Beach (R.I.P.)
